In the ancient Rome, "Aigleucos" was a very popular type of sparkling wine. A winery with a tunnel was discovered at the archaeological site of Pompei. A constant cold water flow used to flow through the tunnel filled with amphorae containing the "Aigleucos" wine. This procedure was used to slow down the must fermentation processes in order to obtain a sparkling wine that lasted a longer time.
